GRAPES

Pinot Nero grapes originating from the most favourable areas of Montecalvo Versiggia, Santa Maria della Versa, Rocca De Giorgi, at a height of between 250 and 400 metre above sea level in limestone and clayey soils.

YIELD PER HECTARE

60/70 quintals per hectare

ALCOHOL GRADE

12,5% vol.

VINIFICATION

The grapes are harvested in picking baskets towards the end of August and beginning of September. A soft pressing immediately takes place where only the free run wine is extracted, followed by a static clarifying. Followed by the fermentation together with selected yeasts in a stainless steel tanks at a strictly controlled temperature of 18° C.

MATURATION

Bottling tirage is carried out the following spring, the wine matures in its bottle for 36months. Afterwhich the degorgement is carried ou, the bottles are then left to rest in their cellars for a further 6 months.

ORGANOLEPTIC CHARACTERISTICS:

Visive

Intense straw yellow with golden reflexes, abundant fine, persistent, beady perlage.

Scent

Ample bouquet, long and caressing with reminiscence of salvia, mint, apricots and vanilla.

Taste

Dry, harmonious, rich and smooth, pleasurable long lasting.

SERVING TEMPERATURE

7° – 8°C

IT IS WELL COMBINED WITH:

Excellent with aperitifs and indeed throughout any meal.
